Bu çalışma Başbakanlı Osmanlı Arşivi’nde bulunan HH-d-17703 nolu deftere
dayanılarak yapılmıştır. Defter 1681 yılının yaz aylarına ait verileri içermektedir. Defter içerik
olarak 1 aylık saray mutfağına alınan sebze ve meyve listelerinin içermektedir. Gün gün
tutulan defter, sebze ve meyvelerin kilo ve fiyatı ile ilgili detaylı bilgiler vermektedir.
Bununla beraber sebze ve meyvelerin kimden ve nereden alındığı ayrıntısıyla yazılmıştır. Bu
defterin incelenmesiyle birlikte Osmanlı saray mutfağında pişirilen ve sofralarda yenen sebze
ve meyvelerin neler olduğuyla ilgili bilgi sahibi olunacaktır. Bunun dışında hem sebze
türlerinin çeşitleri hem de meyve çeşitlerinin cinsleriyle ilgili de bilgi verilmektedir. Mesela
üzüm, kabak, fasulye ve armut gibi malzemelerin farklı farklı cinslerinin olduğu
anlaşılmaktadır. Bu yönüyle de ayrıca bir bilgi zenginliği elde edilmiş olmaktadır. Çalışma
sunduğu bu veriler sayesinde alanına katkı yapmayı amaçlamaktadır. Nitekim Osmanlı
mutfağına dair pek çok çalışma yapılmıştır. Bu çalışma da 17. Yüzyılın son çeyreğinde
Osmanlı mutfağına giren sebze meyvelere dair veri sağlaması bakımından alanına önemli bir
katkı sağlamaktadır.
This study is based on the book of HH-d-17703 in the Ottoman Archives of the
Prime Minister. The book contains data for the summer months of 1681. The contents
of the notebook include the list of vegetables and fruits collected in a 1 month palace
kitchen. The day-to-day notebook provides detailed information about the weight and
price of fruits and vegetables. However, where and where the fruits and vegetables are
written in detail. With the examination of this notebook, you will have information
about the vegetables and fruits that are cooked in the Ottoman palace kitchen and
eaten at the tables. In addition, both types of vegetables and fruit varieties are also
given information about the species. For example, grapes, pumpkin, bean and pear are
different kinds of materials such as different types. In this respect, a wealth of
information is obtained. The study aims to contribute to the field thanks to these data.
As a matter of fact, many studies on Ottoman cuisine have been made. This study also
makes an important contribution to the field in terms of providing data on vegetables
fruits entering the Ottoman kitchen in the last quarter of the 17th century.
