Gastronomi ve mutfak sanatları eğitimi alan üniversite öğrencilerinin kariyer beklentileri: lisans öğrencilerine yönelik bir araştırma

Abstract

Gastronominin her geçen gün önem kazanması, Gastronomi ve Mutfak Sanatları Eğitiminin de yaygınlaşmasına sebep olmuştur. Türkiye’de 2003 yılında başlayan Gastronomi ve Mutfak Sanatları eğitimi her geçen sene yaygınlaşarak, 2017 yılında 56 programı bulmuştur. Bu çalışmanın amacı, gastronomi ve mutfak sanatları eğitimi alan lisans öğrencilerinin kariyer beklentilerini ölçmektir. Araştırmanın ana kütlesini, İç Anadolu Bölgesi’nde bulunan devlet üniversitelerinde Gastronomi ve Mutfak Sanatları alanında eğitim gören lisans öğrencileri oluşturmaktadır. Anket yolu ile toplanan veriler istatiksel paket programlar yoluyla analiz edilmiştir. Öğrencilerin kariyer beklenti düzeylerinin, demografik özelliklerine göre farklılık gösterip göstermediğini tespit etmek amacıyla yapılan “t’’ testi ve “Anova’’ testi sonuçlarına göre; öğrencilerin cinsiyetleri ve ortaöğretimde alan ile ilgili ders alma ile kariyer beklentileri arasında anlamlı bir farklılık bulunmadığı tespit edilmiştir. Ayrıca yaşadıkları coğrafi bölge değişkeni ile kariyer beklentileri arasında anlamlı bir farklılık bulunmadığı tespit edilmiştir. Öğrenim görülen sınıf, yaş ve ailenin aylık geliri değişkenleri ile kariyer beklentileri arasında anlamlı farklılıklar bulunduğu tespit edilmiştir. Yine yapılan “t” testi ve “Anova” testi sonuçlarına göre; Gastronomi ve Mutfak Sanatları alanında staj yapan öğrenciler ile staj yapmayan öğrencilerin kariyer beklentileri arasında anlamlı farklılıklar bulunduğu tespit edilmiştir.

The aim of this study is to measure career expectations of undergraduate students studying gastronomy and culinary arts. Gastronomy has become more and more important every day, and Gastronomy and Culinary Arts education has become popular. Turkey also Gastronomy and Culinary Arts training began in 2003 widespread with each passing year, it has found 56 program in 2017. The main mass of the research constitutes undergraduate students studying in Gastronomy and Culinary Arts in state universities in Central Anatolia. Data collected via questionnaire were analyzed by statistical package programs. According to the results of "t" test and "Anova" test conducted to determine whether career expectations of students differ according to their demographic characteristics; it was found that there was no significant difference between the sexes of students and career expectations. It has been determined that there is no significant difference between the course taking and career expectations of the field in secondary education. It was also found that there was no significant difference between the geographical region variables and the career expectancies experienced by the students. It was found that there were significant differences between the variables of education, age and family monthly income and career expectations. According to the "t" test and the "Anova" test results, İt has been found that there are significant differences between students who are practicing in the field of Gastronomy and Culinary Arts and those who are not.
