Önemi giderek artan "sağlık" kavramı tüm dünyada gerek kişilerin gerek kurumların en çok yatırım yaptığı ve ilgilendiği alanlardan biridir. Sayıları her geçen gün artan sağlığı kaybettiren unsurlara (salgın, kronik ve genetik hastalıklar) karşılık tedbirli olma ve/veya alternatif kaynaklarla sağlığı koruma, iyileştirme çabası da artmaktadır. Termal turizm insanlık tarihi boyunca şifa ve sağlık arayışı için önemli bir faaliyet alanı olarak karşımıza çıkmaktadır. Son yıllarda giderek yaşlanan dünya nüfusu için daha da önemli bir hale gelmektedir. Ülkemiz sahip olduğu jeotermal kaynaklar ve Avrupa ve Ortadoğu ülkelerine yakınlığı ile önemli bir termal ve SPA destinasyonuna sahiptir. Ülkemizin sahip olduğu bu zenginliklerle dünyada giderek artan sağlık ve termal turizm pastasından hakettiği payını alması ve rekabet gücünü artırması amacıyla Türkiye Turizm Stratejisi 2023 ve Eylem Planı 2007-2013 kapsamında yeni yatırımlar ve gelişimler için termal turizm bölgeleri ve merkezleri belirlenmiştir. Beslenme doğrudan sağlığı etkileyen bir faktör olduğu için sağlık turizmi işletmelerinin sunduğu yiyecek-içecek hizmetinin incelenmesi, menülerin belli kriterlere (makro besin ögeleri açısından yeterlilik) sahip olup olmadığının belirlenmesi, menü planlaması gibi konular da sağlığı ve sağlık turizmini ilgilendirmektedir. Çalışmada Türkiye'de Termal Turizm Projesi kapsamında Orta Anadolu Termal Turizm Bölgesi'nde bulunan Aksaray, Niğde, Nevşehir, Yozgat ve Kırşehir illerinde faaliyet gösteren yeme- içme hizmeti sunan termal turizm tesislerindeki menü içerikleri ele alınarak incelenmiştir. Beslenme Bilişim Sistemleri programı yardımıyla analiz edilen menüler sağlık otorilerince önerilen miktarlarla kıyaslanarak değerlendirilmiştir. Bu veriler ışığında ternal turizm işletmelerinde sunulan yeme- içme hizmetinin kalitesi ve sağlık temasıyla uyumu için beslenme uzmanı ve diyetisyenlerle iş birliği yapılması, daha profesyonel ve doğru bir menü planlaması ihtiyacı olunduğu sonucuna varılmıştır.
The concept of "health", whose importance is increasing day by day, is one of the areas that people and institutions invest the most and are interested in. Efforts to be cautious or to protect and improve health with alternative sources are increasing in response to the increasing number of health-destroying factors (epidemic, chronic and genetic diseases). Thermal tourism has emerged as an important field of activity for the pursuit of healing and health throughout human history. In recent years, it has become even more important for the aging world population. Our country has an important thermal and SPA destination with its geothermal resources and its closeness to European and Middle Eastern countries. Thermal tourism regions and centers have been determined for new investments and developments within the scope of Turkey Tourism Strategy 2023 and Action Plan 2007- 2013, in order for our country to get its deserved share from the health and thermal tourism sector that is increasing in the world with these riches and to increase its competitive power. Since nutrition is a factor that directly affects health, issues such as examining the food and beverage service offered by health tourism businesses, determining whether the menus have certain criteria (adequacy in terms of macro nutrients), menu planning are also related to health and health tourism. In the study, the menu contents of the thermal tourism facilities operating in the provinces of Aksaray, Niğde, Nevşehir, Yozgat and Kırşehir in the Central Anatolian Thermal Tourism Region were examined within the scope of the Thermal Tourism Project in Turkey. The menus analyzed with the help of the systems program were evaluated by comparing the amounts recommended by the health authorities. In the light of these data, it has been concluded that there is a need for cooperation with nutritionists and dietitians, and a more professional and accurate menu planning for the quality of the food and beverage service offered in domestic tourism enterprises and its harmony with the health theme.
