Dünyada yaşanan ekonomik ve teknolojik gelişmeler sonucu insanların tatil, dinlenme veya iş amacıyla bir yerden bir yere seyahat etmeleri daha kolay hale gelmiştir. Bu durum otel işletmelerini giderek önem kazanan işletmeler haline getirmiştir. Turizm sektörü içerisinde yer alan otel işletmelerinin de bütün işletmeler gibi amacı kâr elde etmek ve devamlılıklarını sürdürebilmektir. Otel işletmelerinin bu amacı gerçekleştirmek için gelirlerini artırmaları ve maliyetlerini azaltmaları gerekmektedir. Gelirlerin artırılması; sunulan hizmet kalitesinin ve çeşitliliğinin artırılmasıyla gerçekleştirilebilir. Maliyetlerin azaltılması ise ancak gelişmiş maliyet muhasebesi sistemlerinin kullanılmasıyla sağlanabilir. Bu durumlar göz önünde bulundurulduğunda otel işletmesi için maliyetler ve gelirler en önemli kavramlar olarak ortaya çıkmaktadır. Çalışmanın amacı otel işletmelerinde maliyet muhasebesi sistemlerinin işleyişini analiz etmektir. Bu amaç doğrultusunda çalışmanın teorik kısmında; otel işletmeleri ile ilgili genel bilgiler ve otel işletmelerinde gerçekleşen muhasebe işlemleri hakkında bilgiler verilmektedir. Çalışmanın uygulama kısmında ise; Kapadokya Bölgesi'nde faaliyet gösteren bir otel işletmesinde maliyet muhasebesi sistemleri üzerine yapılan bir araştırmanın bulgularına yer verilmektedir. Uygulama çalışması sonucu elde edilen bulgulara göre; otel işletmesinin tam maliyet sistemini kullandığı ve maliyetleri hesaplarken fiili verilerden yararlandığı ancak planlama ve bütçeleme sistemi kullanmadığı için maliyetleri kontrol altında tutma konusunda zorluklar yaşayabileceği tespit edilmiştir. Otel işletmesinin maliyet muhasebesi sistemlerine yönelik eksikliklerin giderilebilmesi için otel işletmesi yöneticilerine bazı öneriler sunulmuştur. Son olarak bu çalışmanın bazı kısıtları olduğu belirtilerek gelecekte bu konuda araştırma yapacaklara öneriler sunulmuştur.
As a result of the economic and technological developments lived in the world, it has become easier for the people to travel to a place in order to holiday, rest or work. This situation has made hotels become an incresingly important busineses. The aim of hotel businesses like others being in tourism sector is to make profit and maintain the continuity. Hotel businesses need to increase their incomes and reduce their costs in order to achieve this purpose. Increasing income can be realized by increasing the quality and diversity of service. Reduction of the costs can only be achieved through the use of advenced cost accounting systems. When this situation is considered, costs and revenues for the hotel business emerge as the most important concepts. The aim of this study is to analyze process of cost accounting systems at hotel businesses. In accordance with this purpose, in the theoretical part of the study, it is given general information about hotel businesses and information about cost accounting occured in the hotel businesses. In the practical part of the study is given a place to the findings of a study on the systems of the cost accounting in a hotel business in Cappadocia region. According to the findings obtained from application study, the hotel business used full cost system and utilize actual data when they calculating costs but it was determined that they can have difficulties about keeping the costs under control because they did not use planning and budgeting system. Some suggestions are offered to hotel business managers to overcome the lack of the system of cost accounting in hotel business. Finally, some suggestions are presented to whom will do researches about this issue in the future indicating that there are some limitations of this study.
