İnsanlığın var oluşundan bu yana uçucu yağ içeren bitkiler majör olarak özellikle, etlerin ve bazı gıdaların saklanması, gıdanın ömrünün uzatılması için kullanılmaktadır. Günümüzde ise yemeklere, tat ve kokusunu geliştirmeleri açısından katılan bu bitkiler, bilim ilerledikçe, içeriklerinde ne olduğu, gıdaların bozulmasını nasıl engellediği konuları araştırılmaya başlanmıştır. Tat ve koku vermeleri dışında içeriğinde bulunan uçucu yağların özellikleri de beslenme ve sağlık açısından incelenmeye başlanmıştır. Doğada bulunan her baharatın kendine özgü uçucu yağ içerikleri olmakla birlikte, farklı bileşenleri ihtiva eden kompleks karışımlar oldukları için biyolojik etkileri bakımından da farklılıklar göstermektedirler. Etki dereceleri içerdikleri etken maddenin özelliğine bağlı olarak birçok uçucu yağ farklı antimikrobiyel etki gösterebilmektedir. Bu çalışmada, bazı bitkilerden elde edilen uçucu yağların 25, 50 ve 75 µL düzeyinde E.coli, Listeria ve Bacillus cinsi bakteriler üzerine antibakteriyel etkileri, disk difüzyon yöntemi kullanılarak belirlenmiştir. Kekik, lavanta, nane, ve biberiyeden elde edilen uçucu yağlarının test edilen bakterilere karşı antibakteriyel etkisinin olduğu tespit edilmiştir. Bu uçucu yağlar içinde kekikten elde edilen uçucu yağın, L. monocytogenes dışında diğer bakterilere en fazla etkiyi gösterdiği saptanmıştır. Anason ve kişnişten elde edilen uçucu yağların çalışmada kullanılan bakterilere karşı etkisi tespit edilememiştir. Araştırma sonuçlarına göre antimikrobiyel etki, uçucu yağ düzeyi ya da miktarı arttıkça benzer şekilde artış göstermiştir.
Since the existence of mankind, plants containing essential oil have been used mainly for the storage of meats and certain foods and to prolong the life of food. Nowadays, these plants, which are added to the foods in order to improve their taste and smell, as science progresses, have started to be investigate what is in their contents and how they prevent the spoilage of foods. In addition to giving taste and odor, the properties of essential oils found in their content have also been examined in terms of nutrition and health. Besides each spice found in nature has its own essential oil content, they are also complex mixtures containing different components and therefore they differ in their biological effects. Many essential oils may have different antimicrobial effects, depending on the nature of the active substance they contain. Therefore, in this study, 25, 50 and 75 ppm amounts from each essential oil obtained from some plants were tested. Antibacterial effects from obtained these amounts on E. coli, Listeria and Bacillus were determined by disc diffusion method. The essential oils of oregano, lavender, mint, and rosemary have been found to have antibacterial effects against the bacteria tested. Among these essential oils, Oregano has been shown to have the most effect on other bacteria except L. monocytogenes. The effect of these oils obtained from anise and coriander aganist the bacteria used in the study could not be determined. According to the results of the study, antimicrobial effect was increased in a similar way asthe level or amount of essential oil increased
