İnsanın yaşamaya başladığı ilk zamanlardan günümüze kadar geçen süreç içerisinde yeme ve içme davranışı hayati
unsurlardan birisi olmuştur. Bu nedenle insanlar yaşamlarının her döneminde yiyecek ve içecek elde etmek için
uğraşmış bunu da doğadan topladığı otlarla ve ilkel yollarla avladığı hayvanların etleriyle karşılamaya çalışmıştır.
İnsanlık tarihinde toplayıcılık dönemi yabani otların en çok tüketildiği dönemdir. Bu dönemde yabani otların
zehirsiz olanları deneme yanılma yoluyla tespit edilmiş, bunlardan hem yemek yapılmış hem de şifa kaynağı olarak
faydalanılmıştır. Bu yabani otlardan yapılan yemeklere ot yemekleri denilmektedir. Bu çalışma ülkemizde bulunan
yenilebilir yabani ot çeşitliliğine dayanılarak, Nevşehir’de de bol miktarda bulanan yenilebilir yabani otların tespiti
ve bu otlardan yapılan yemekleri literatüre kazandırmayı amaçlamıştır.
Within the time period from the first breath of the first human being to the present, eating and drinking behavior
has been one of the vital elements for the mankind. Consequently, in each period of their lives, people have exerted
to gather food and baverage, which they excelled at via the herbs they collected from the nature and the meat of
the animals they hunted making use of their primitive tactics. In the history of mankind, the period in human
history when wild herbs (nature-grown) were consumpted most was the period of foragers. Within this span of
time, the herbs that were nonpoisunous were detected through trial and error method, and they were not only made
use of in the preparation of meals but also taken advantage of as healing sources. These meals prepared via the use
of the wild herbs are called herb dishes. The study, based on the variety of edible wild herbs existing in our country,
intends to determine the edible wild herbs abundantly existing in the region of Nevşehir and to add them to
literature.
