Araştırmada, Antalya Döşemealtı'ndaki tören yiyecek içeceklerinin tespit edilip kayıt altına alınması ve gastronomi turizmine kazandırılması amaçlanmıştır. Döşemealtı'ndaki tören yiyecek içeceklerinin gastronomi turizmine kazandırılmasının ekonomik ve sosyal katkı sağlayacağı düşünülmektedir. Bu doğrultuda, yöredeki kültür hakkında bilgi sahibi olan 21 kişi ile yarı yapılandırılmış görüşme tekniği kullanılarak röportajlar yapılmıştır. Görüşmelerde törenlerdeki uygulamalar hakkında bilgiler toplanmıştır. Döşemealtı'nda yaşayan insanların hayatındaki önemli geçiş dönemi törenlerinde hazırlanan yiyecek ve içeceklerin adı, nasıl ve kimler tarafından yapıldığı, kullanılan ekipmanlar ve malzemelerin tedariki, davetliler ve oturma düzenleri, yemeğin hikâyesi ve inanışlar ile katılımcıların yorumları değerlendirilmiştir. Yiyecek – içecekler dışında tören pratiklerindeki farklılıklar ve anlamları hakkında görüşler de derlenmiştir. Katılımcıların aktardıklarına göre törenlerde hazırlanan bir menü oluşturulmuştur.
The aim of this study is to identify and record the ceremonial food and beverages in Antalya Döşemealtı and to bring them into gastronomy tourism. It is though that bringing ceremonial food and beverages of Döşemealtı to gastronomy tourism is going to contribute both economically and socially. For purpose of this, interviews were conducted with 21 people knowledgeable about the culture in the region, using semi-structured interview technique. Information about the practices in the ceremonies was collected during the interviews. The following subjects were evaluated about food and beverages prepared in the important transition period ceremonies in the life of the people living in Döşemealtı. The subjects about food and beverages are; their names, how and by whom they were prepared or cooked, the supply of equipment and materials used, the guests and their seating arrangements, the story of the meal and beliefs and the comments of the participants. Except for food and beverages, opinions of participants about the differences in ceremonial practices and their meanings were also compiled. A certain menu was generated in the ceremonies according to the participants' point of view.
