Gastronomi, ziyaretçilerin özel ilgi alanlarından biridir. Ziyaret edilen destinasyonun kültüründen beslenerek oluşur ve yerele özgüdür. Günümüzde ziyaretçiler gittikleri bölgelerin mutfak kültürünü merak etmekte ve hatta bazen bir seyahatin en önemli ve tek faktörünü gastronomi kültürü değerleri oluşturabilmektedir. Bu sebeple gastronomi turizmine gerektiği önemi ve değeri vererek, destinasyonun var olan kültürünü tanıtmaya çalışmak, diğer rakiplerine göre daha güçlü olmasında etkin rol oynayacaktır.
Kapadokya bölgesinin gastronomik unsurlarına göz atıldığında, özellikle Avanos ilçesinde, çanak-çömlek üretiminin çok eski yıllardan beri yapılıyor olmasından dolayı, toprak kaplarda pişirilen geleneksel yemekler dikkatleri çekmektedir. Nevşehir tava ve çömlekte kuru fasulye bunlar arasında sayılabilir. Yine, pekmez kullanılarak yapılan tatlılar, hamur işleri de yöreye özgü örneklerdir. Ancak, bunlara ve Kapadokya bölgesinin diğer gastronomik unsurlarına turizm işletmelerinin menülerinde yeterince yer verilmediği görülmekte ve literatüre bakıldığında, gastronomi turizmi ve Kapadokya bölgesine ait gastronomik unsurlar hakkında, doyurucu ve yeterli yazılı kaynağa rastlanılmamaktadır.
Kapadokya bölgesini ziyaret eden turistlere, Kapadokya’nın gastronomik unsurları hakkındaki algıları ile kişisel özellikleri arasındaki farklılıkları belirlemeye yönelik anket çalışması yapılmıştır. Bölgeyi ziyaret eden turistlere uygulanan, toplam 410 adet anket formu analiz edilmiştir. Analizler sonucunda Kapadokya’yı ziyaret eden turistlerin, Kapadokya gastronomisi hakkındaki algılarının düşük seviyede olduğu tespit edilmiştir.
Gastronomy is one of the special interests of the visitors. It is formed by the culture of the visited destination and is local. Nowadays, visitors are curious about the culinary culture of the regions where they go and sometimes they can create gastronomy culture values which are the most important and only factor of a trip. For this reason, giving importance and value to gastronomy tourism, trying to promote the existing culture of destination, will play an active role in being stronger than other competitors. When we look at the gastronomic elements of Cappadocia region, especially in Avanos district, since the pottery production has been done for many years, traditional dishes cooked in clay pots attract attention.
Nevşehir tava, as detailed below, baked beans in the pot are among them. As well, desserts made using molasses, pastries are examples specific to the region. However, these and other gastronomic elements of the Cappadocia region are not sufficiently covered in the menus of tourism enterprises, and in the literature, there are no satisfactory written sources about gastronomic tourism and the gastronomic elements of the Cappadocia region.
A survey was conducted to determine the relationship between the perceptions of Cappadocia and the perceptions of Cappadocia on the gastronomic elements. A total of 410 questionnaires applied to tourists visiting the region were analyzed. As a result of the analysis, it was determined that the tourists who visited Cappadocia had low perceptions about Cappadocia Gastronomy.
