İsraf sorunu, özellikle de ekmek israfı sorunu tüm ülkelerde olduğu gibi ülkemizde de önemli görülmüş olup, bu amaçla çeşitli kampanyalar ve projeler başlatılmıştır. Ülkemizde yapılan ekmek israfı nedeniyle yıllık ekonomik kaybımız, dünyada birinciolduğumuz un ihracatından kazandığımız gelire eşit olmuştur. Bu sonuç dünya ekonomileri içinde gün geçtikçeilerleyen ve bu süreçteki yükselişine devam eden ülkemiz için oldukça yüksek bir rakam olmuştur.Bu çalışmanın amacı, israf sorununun özellikle de ekmek israfı sorununun Türkiye ekonomisine olan etkilerini belirlemektir. Bu amaca ulaşabilmek için,fazla ekmek tüketiminin azaltılması ve israfın önüne geçmek amacıyla; Gıda, Tarım ve Hayvancılık Bakanlığının bir kuruluşu olan Toprak Mahsulleri Ofisinceilk kez 2008 yılında yapılan çalışmada, ekmek tüketimi ve israfıyla ilgili bilgiler yer almıştır. İkincisi ise 2012 yılında tamamlanmış olan, kısa adı "Türkiye'de Ekmek İsrafı Araştırması" olarak geçenaraştırma da yine ekmek tüketimi ve ekmek israfında ortaya çıkan değişimler izlenmiştir.Yapılan bu çalışmaların toplumdaki yansımalarını ve ekmek israfındaki değişimleri gözlemlemek amacıyla yeniden 2013 yılı sonunda bir araştırma daha yapılmıştır. Bu araştırmanın sonuçlarında olumlu gelişmeler olduğu görülmüştür. En çok tüketilen gıda ürünlerinden biri olan ekmeğin ham maddesi buğdaydır. Bu nedenle buğdayın üretiminden ihracat ve ithalatına kadar yaşanan bütün gelişmeler doğrudan ekmeğe yansımaktadır. Bu yönden baktığımızda ekmek ile ilgili olarak öncelikle buğdaydaki gelişmeler yakından değerlendirilmiştir. Ayrıca Türkiye'de uygulanan tarım politikaları da araştırılmıştır.Bu çalışmada, ekmeğin hem üretildiği hem de tüketildiği yerlerde, tüm detaylarına kadar israfın nasıl olduğunu, nedenlerini ve sonuçlarını ortaya çıkarmakla beraber, üreticilerin ve tüketicilerin israf konusunda bilinçlendirilmesi amaçlanmıştır.Çünkü ekmek israfı tüm dünyada olduğu gibi ülkemizi de ekonomik yönden olumsuz olarak etkilemiştir. Bu çalışmada ayrıca israfın ekonomiye etkileri incelenerek israfı önlemenin yolları araştırılmıştır. Çalışmanın sonunda ise daha önceden genel olarak ortaya çıkan israf ile ilgili özellikle de ekmek israfı ile ilgili yapılan araştırmalar değerlendirilerek karşılaştırma yoluyla dünyada ve özellikle ülkemizde olan etkileri değerlendirilmiştir. Sonuç olarak, ekmek israfının ülke ekonomisine olumsuz etkileri incelenmiştir.
Waste problem, especially the problem of wastage of bread is accepted important as in our country as all over the world, for this purpose several campaigns and projects have been initiated. Our annual economic loss due to the waste of bread in our country is equal to the income gained from flour export we are the best in the world. This result has been very high figure for our country which is progressing among the world economies and continue to rise in this process. The purpose of this study is to determine the impact of the waste issue, especially bakery waste problem on Turkish economy. To achieve this purpose,a study in order to prevent and reduce the excessive waste of bread consumption was conducted by the Office of Soil Products under Food, Agriculture and Livestock Ministry for the first time in 2008. In the second one, "Bread Waste Research in Turkey",which was completed in 2012, the changes occurring in bread consumption and wastage of bread were observed. In 2013, there conducted another study to determine the reflections of these studies and to observe the changes in bread waste in the society. At the end of the study, it was determined that these studies have positive effects. The raw material of bread, one of the most widely consumed food products, is wheat. Therefore, all developments experienced in the process of the production to the export and import of wheat affect breaddirectly. From this point of view, firstly, the developments in wheat were evaluated closely. Furthermore, the agricultural policies applied in Turkey have also been investigated.In this study, it was aimed to reveal the ways, causes and consequences of waste in the production and consume places of bread and to raise awareness of producers and consumers about that waste issue because bread waste have affected our country as all over world in a negative way. This study also examined the effects of the waste on economy and the ways to prevent the waste. At the end of the study, after the studies about waste and especially waste of bread have been examined, the effects of it on our county and the world have been evaluated by comparison and contrast. As a result, the negative effects of bread wastage on a country'seconomy havebeen studied.
