Kruvaziyer turizmine katılan yabancı turistlerin Türk mutfağına ilişkin algıları: Kuşadası limanı örneği

Abstract

Alternatif turizm çeşitleri içinde mutfak turizminin önemi gün geçtikçe artmaktadır. Buna paralel olarak son yıllarda hızlı bir büyüme gösteren kruvaziyer turizmi de mutfak turizminin gerçekleşebileceği bir saha olarak kendini göstermektedir. Bu çalışmanın amacı, kruvaziyer turizmini tercih ederek Türkiye'yi ziyaret eden yabancı turistlerin yiyecek içecek deneyimleri ve bu deneyimlerinden hareketle Türk Mutfağı'na yönelik bakış açılarını elde etmek, Türk Mutfağı'nın gelişimi ve tanıtımı için yeni fikirler oluşturmaktır. Bu amaçla Kuşadası limanından seyahat eden yabancı turistlerden anket tekniği aracılığıyla veriler toplanmıştır. Anket yabancı turistlere uygulandığı için İngilizce olarak hazırlanmıştır. Anket formunda katılımcıların demografik özelliklerine, Türkiye'de bulunmalarına, beğenilerine ilişkin sorular bulunmaktadır. Yapılan anket çalışması sonucunda elde edilen veriler, SPSS 20.0 programında uygun istatistikî yöntemler aracılığıyla (frekans, yüzde, tek örneklem t test, bağımsız t test ve one-way anova) test edilmiştir. Uygulanan bu analizlere göre, yabancı turistlerin Türk Mutfağına yönelik algılamalarında olumlu yönde görüşler bildirdiği belirlenmiştir. Türk mutfağı ile ilgili görüşlerinin cinsiyete, yaşa, medeni duruma, çocuk sahibi olma durumuna, eğitim seviyesine, mesleğe, uyruğa ve ikamet edilen bölgeye göre farklılık göstermediği belirlenmiştir. Türkiye'yi tercih etme sebepleri arasında "Türkiye'nin tarihi ve kültürel bir yer olması" ilk sırada gelmektedir. Anketi cevaplayan yabancı turistlerin önemli bir kısmı ikamet ettikleri ülkeye döndüklerinde tanıdıklarına Türk mutfağına ilişkin bilgi vereceğini belirtmiştir. The importance of cuisine tourism is increasing in alternative forms of tourism day by day. In parallel with, showing rapid increase which is cruise tourism is demonstrated as a field for cuisine tourism. The aim of this study is to determine of the food and beverage experiences related to foreign tourists' who participated to cruise tourism, to obtain their perceives about Turkish cuisine and to create new ideas for Turkish cuisine's development and promotion. For this purpose, data was collected from the foreign tourists who travel to their home at Kuşadası Port by applying the questionnaire technique. The survey was prepared in English as it was designed to conduct with foreign tourists. At the survey, the participants were asked to answer questions about their experiences on the food and beverage, and also their opinions on the personnel characteristics, taste. The datas which was obtained by applied survey were tasted with SPSS 20.0 programme by using suitable statistical methods (frequency, percentage, one-sample T test, independent T test and one way Anova). According to these analysis, positive opinions were identified foreign tourists' perceptions about Turkish cuisine. The perceives about Turkish cuisine did not differ according to gender, age, marital statue, being a parent, education level, occupation, nationality and permanent residence country. "Historical and cultural attractions of Turkey" is the first among the other reasons to visit Turkey. A significant number of the respondents of the survey stated that they would give information on the Turkish cuisine to their friends and families when they return to their country.
